Mayonnaise & Aioli
1 EGG YOLK
1 teaspoon LEMON JUICE
SALT, PEPPER
1 teaspoon DIJON MUSTARD
1 cup VEGETABLE OIL

--Whisk the yolk vigorously with lemon juice, salt, pepper, dijon mustard.
--Begin dribbling oil into yolk mix very slowly, still whisking.
--Mix will soon start to "take," gaining body.
--Start adding oil more quickly.
--If mayo starts to turn (separate), add a little more mustard.
--When finished, stir 1 tablespoon BOILING WATER into mayo, to set it.
--Keep in tightly sealed container in fridge.

Aioli...Crush as many GARLIC CLOVES as you think appropriate (maybe two or three medium cloves) into the mayo.  I tend to mix in as well some herb, like CHEVRIL.

The truth is, countless variations are easy to "whip up," for example using curry, finely chopped shallots or onion, any number of herbs...(In France you would need a special permit to experiment this way but here in America, for good or ill, we are able to do as we please.)
